Irish Salmon with Lemon and Dill

Ingredients:
- 4 salmon fillets (around 6 oz each)
- 1 tbsp olive oil
- Salt and freshly ground black pepper
- 1/2 lemon, sliced
- 1 bunch fresh dill, chopped
- 1 bunch radishes, trimmed and halved
- 4 carrots, peeled and roughly chopped
- 1 tbsp honey
- 1 tsp Dijon mustard
- 2 tbsp chopped fresh parsley
Instructions:
- Preheat oven to 400°F (200°C).
- Drizzle salmon fillets with olive oil, season with salt and pepper, and top with lemon slices and dill. Arrange in a baking dish.
- Toss radishes and carrots with honey, Dijon mustard, and a pinch of salt and pepper. Spread around the salmon in the baking dish.
- Bake for 15-20 minutes, or until salmon is cooked through and vegetables are tender-crisp.
- Garnish with fresh parsley before serving.
